This is the grand finale of my anti-knight thermos trilogy. You can try the other two puzzles here: Anti-Knight Thermos 1 | Anti-Knight Thermos 2.
I checked with Rangsk's solver and noticed that there are ~15 x 10^15 solutions to the puzzle without the anti-knight constraint, so buckle up!
Rules:
Normal Sudoku rules apply.
Any two cells separated by a single move of a Chess knight must contain different digits.
On grey thermometers, digits must strictly increase from the circular bulb-end.

The puzzle manages to feel very unique with a ruleset/concept that, while still fun, feels a bit saturated to me at this point. Really nice setting.

Brilliant puzzle! Very tricky, there is always a clever question to ask that brings you forward, but it's never obvious which question that is. Very rewarding solve. Thank you

Really enjoyed this and it really tested me. Had to take a break inbetween. Every time I thought it was going to be smooth sailing there was another challenge. I got there in the end though.

Every step of the solve felt extremely deliberate. There were at least two times I was only able to spot the next deduction by thinking "I bet he has managed to pull the same trick one more time".
