Mystery Meat Sandwiches

This puzzle was originally set in June 2022 for the Cracking the Cryptic Discord's monthly prompt of "Not Enough Info."
Rules:- Normal sudoku rules apply.
- Every digit (including 0) is represented by a letter from A-J. Which letter represents which number must be determined by the solver.
- Two of the digits from 1-9 are "crust" digits which must be determined by the solver.
- Clues outside the grid give the sum of the digits between the two crusts in that row or column.
- A clue in the top left corner of a cage gives the value of that cell.

Wonderful puzzle! I enjoyed the solve. Maybe you should add one rule: none of the two-digits-numbers may start with 0.
