I did this one in about three hours and I'm both astonished and delighted to say that is has a unique solution! Enjoy!
Rules:
Normal Sudoku rules apply. The digits along a thermometer increase from the bulb end.
Anti-Knight: Identical digits may not appear one knight's move away from each other.
Highlighted cells are anti-double-knight cells. Identical digits may not appear any 2 knight's moves away from those cells. (Note: those knights moves needn't be in the same direction, as is the case for some chess variant pieces)

By collapses, I just mean resolves. All the remaining pieces quickly fall into place at that point.

There's one tricky bit near the end (that then collapses the puzzle), but otherwise not that challenging. 3-star difficulty in my view, but others' mileage may vary.

I'm not quite familiar with the courtesy and etiquette norms are for puzzle setting, but I feel the need to warn that there are a couple quite long hypotheticals required to reach the solution, about 5 steps long if I had to say.
