Thermo Entropy

This puzzle was initially created almost two years ago, and was only posted on the CTC Discord about one year ago. In keeping with that trend, I figure another year gone by marks a good occasion to finally post it here!
Rules:
Normal Sudoku rules apply.
Global Entropy: Every 2x2 area within the grid must contain a low digit [123], a middle digit [456], and a high digit [789].
Digits must strictly increase along each thermometer starting from the bulb end.

Very nice construction! You can immediately tell that it was created with a great understanding of the Entropy constraint.

This was the most difficult puzzle I have solved yet as well as my first 3 star puzzle and first ever entropy puzzle. Coloring was extremely helpful. Very new to these types of alternate ruleset sudokus, but this was a great one.

Dang, this puzzle was brutal for me, took me hours, this was my first 3 star puzzle that I solved. But yeah, this is def one of my favorite puzzles, loved the coloring exercise and got to show my brother how coloring can help solve a puzzle! Thanks for setting!
