Hidden Sandwiches (Fog, Sandwich Layers)

This puzzle was created for Secret Santa 2024. The recipient is Mark Goodliffe, and he also made solve video of the puzzle. I came up with new sandwich variation, which I’m calling it Sandwich Layers. Enjoy!
Rules:

Normal sudoku rules apply.

Fog: The grid is partially covered in fog. Entering correct digits will clear the fog from surrounding cells.

Sandwich Layers: The number in the top left corner of a cage indicates the sum of the digits sandwiched between 1 and 9 in that row (red cage) or in that column (blue cage), where a "?" can represent any sum ranging from 0 to 35. The digit in a cage indicates how many digits (including the crust of 1 and 9) the corresponding sandwich sum contains.

I always love when some mental maths plays a large part in a sudoku so i was intrigued by this puzzle straight away. I struggled at first with the constraint as I hadn't come across it before, however I soon got to grips with it. The logic was beautiful throughout, and a bit of light colouring near the end saw me get past a tricky section and the end was in sight! One of my favourite puzzles I've done, thanks!

Had to do a bit of arithmetic scribbling on the side. Very nice placement of clues and fog-work.

Very nice! One thing to note is that I had to assume that a ? cage can not be a zero value. I did run into a situation where the ? cage cell could have been filled in with a 2 or 4. The 2 would have made the cage value 0 (1 and 9 would be touching). Assuming it was not zero allowed me to finish.

Wow - what a great puzzle! I think this one makes it a lot easier than some constraint puzzles to deduce where a certain digit must (or must not) be able to go thanks to the Red/Blue cage constraint. As a result this one flies by and flows beautifully.
